Olga Viegas is a researcher at LAQV/REQUIMTE and Invited Assistant Professor at the University of Porto - Faculty of Nutrition and Food Sciences.
Owns a degree in Nutritional Sciences and a PhD in Food Consumption and Nutrition Sciences.
Over the last years her research activity has been developed on food quality and safety.
Her main research focuses are:
Development and validation of analytical methods for determination of nutrients and contaminants in food;
Evaluation of genotoxicity of food contaminants and search for compounds that inhibit the formation and genotoxicity of food born carcinogens;
Determination of bioactivity and antioxidant function of plant foods and valorization of by-products and low value products.
